Potato Pancakes
- 1 Cup Leftover Steve's Mashed Potatoes, Cold
- 1 Large Egg
- 1 Large Egg White (no yoke)
- 1/2 Tbs Butter
Place all ingredients in small mixing bowl and mix together using a fork.
Preheat non-stick Skillet on med (4) for 2 or 3 minutes or until splashed water dances...
Using the fork or a med spoon place dollops of mixture onto skillet, shake skillet softly causing the mixture to
flatten out.
the pancakes should be about 3 inches across. Cook until edges appear to dry and the pancake holds together when
lifted with a small thin spatula.
Flip and cook for another 2-3 minutes.
yields about 8 3-inch pancakes
